Crunchy, uber healthy, and so easy. One of my favorite salads to bring to BBQ's and potlucks.
2- 2 1/2C sprouted lentils (tails about 1/4-1/2" in length)
1/3 C vegenaise or mayo
1 T apple cider vinegar
2t curry powder
1/2t dried dill
1 1/2C shredded carrot
salt and pepper to taste
Add all ingredients to a large bowl and stir.
